Mexican cornbread

Mexican cornbread

2C cornmeal mix
1 14oz can cream style corn
1C chopped onion
1C sour cream
2/3C veg oil (or bacon drippings)
2 beaten eggs
2Tbls sugar
JalapeƱo peppers chopped (as much or as little as you like)
1C-2C shredded cheddar(again, to your preference)

Mix everything together. Grease pan (9x13) pour in, bake at 375 around 30 mins, until golden brown on top and toothpick inserted in middle comes out clean.
