Pumpkin Spice Cookies

Pumpkin Spice Cookies

1 cup butter, softened – $0.84
1 cup sugar – $0.30
1 tsp baking powder – $0.02
1 tsp baking soda – $0.02
1/2 tsp salt – $0.01
1/2 tsp ground cinnamon – $0.03
1/2 tsp nutmeg – $0.03
1 egg – $0.11
1 tsp vanilla – $0.03
1 cup pumpkin – $0.56
2 cups flour – $0.18

Frosting

1/4 cup butter – $0.21
1/4 cup brown sugar – $0.75
4 Tbsp milk – $0.05
1 tsp vanilla – $0.03
2 cups powdered sugar – $0.60

Directions:

1. Preheat oven to 350 degrees.

2. In a large bowl, beat butter with a mixer on medium speed 30 seconds. Add sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Beat until well combined. Add egg and vanilla until mixed well. Beat in pumpkin. Add flour and continue to mix until fully incorporated.

3. Drop dough by heaping tablespoons (leaving a few inches between each cookie) on an ungreased cookie sheet. Bake for 10–12 minutes or until tops of cookies are set. Cool completely.

4. Make frosting by heating butter and brown sugar in a small saucepan over medium heat. Stir together until melted and smooth. In a medium bowl combine butter mixture with milk and vanilla. Beat in powdered sugar until smooth. Frost cookies and sprinkle with cinnamon.

Yields: 30 cookies Total Cost: $3.77
