Slim Summer Peach Crisp
It’s the best part of the pie—without
the guilt. Oats, walnuts and whole-wheat flour bring the crisp; juicy
peaches and honey bring the summer.
Ingredients:
For the Filling:
2 cups fresh peaches, sliced and peeled
6 tbsp honey
1/2 lemon, zested and juiced
2 tsp cornstarch
For the Topping:
3/4 cup quick oats
1/4 cup chopped walnuts
1/3 cup whole wheat flour
1/2 cup light brown sugar
3/4 tsp cinnamon
1/3 cup melted butter
Directions:
Heat oven to 375°F.
Combine peaches, honey, lemon juice and zest in large bowl.
Sprinkle with cornstarch. Toss until fruit is coated.
Place fruit in an ungreased pie dish.
Mix remaining ingredients. Sprinkle over the fruit.
Bake about 40 minutes or until topping is golden brown and fruit is tender..
